Who Moved My Meat?

A little humor for this serious topic  :)

Moving away from meat has been a little challenging in the last month. Although, this transition has been rewarding with an energy increase and overall new well-being that will be hard to give up.

The challenge i’ve faced always arises when i’m out socializing :)  I’ve managed and i’ve supplemented meat with other textured foods, but i’ve also added more seafood to my diet and new foods that would of not been my first choice. I’ve been lucky enough, I’ve had some pretty tasty options show up in my plate: spinach ravioli, vegetable risotto, tomato soup. Not too shabby.

Recently, I began experimenting with veggies I normally walk by at my grocery store or farmers market. This weekend I had a delicious meal, although I can’t take credit for it; my mom(non-vegetarian) surprised me with it, but holy moses, the photos below don’t do it justice. It was pretty damn good and I have leftovers. yeahy
